Course Description -

Every teaspoon of living soil contains more than 100 million living organisms! The secret to abundant organic food-growing is teaming up with these organisms to create a diverse and healthy soil ecosystem. Sarah Williford and Kevin Svorak of Regeneration CSA join forces with soil microbiologist extraordinaire David Travis to share the secrets of the soil foodweb and practice home and market scale gardening techniques.

Course Description -

Imagine a forest where every single tree is dripping with fresh fruits and ripening nuts. Every shrub is packed with delicious berries, and every other plant is a medicinal herb, culinary spice, or beautiful edible flower. Tubers and root crops are abundant underfoot, gourmet mushroom logs sprout in the shade, and hardy kiwi vines climb back up through the layers of this multi-functional forest of food. Participants learn how to design, establish, and maintain such gardens of eden, and take home plants to start their own!

Course Description -

Natural building uses locally-available, low-energy, non-toxic materials like straw, clay, sand, and recycled timber to create beautiful and functional structures in the built environment. Experienced earth-plasterer and natural builder Kay Cafasso will survey natural building styles appropriate to the Hudson Valley, and lead participants through some easy-to-learn earthbuilding techniques.
